BREAKFAST BOWL

Great way to use leftover chicken if you have some and a yummy way to start your day! You can use any vegetables instead of the chicken if you want a veggie dish.

Ingredients:

 

  • 2 tablespoons butter

  • 1/4 cup sliced fresh mushrooms

  • 1/4 cup chopped onions

  • 6 eggs

  • 1/4 cup milk

  • 1/4 cup Moroccan black olives

  • 3/4 cup grilled chicken

 

Directions:

 

Heat 1 tablespoon butter in one skillet or frying pan over medium-high heat and the other tablespoon of butter in a second skillet or frying pan over medium-high heat. Add mushrooms, onions, grilled chicken and olives into one skillet.

 

In a mixing bowl, beat together eggs and milk; salt & pepper. Add egg mixture to second skillet/frying pan. Cook until eggs are set. When eggs are almost done; soft. Move eggs to the bowl, top with vegetable/chicken mix. Serve while hot.
