GOAT CHEESE SPREAD

Everyone loves a good spread. You can make this one a day ahead of serving and keep refrigerated. Simple but tasty. You can also put as much or as little herbs as you want. The original recipe has no garlic, however, as a garlic monster, I put garlic in everything (in this case you would add 3 cloves minced). As an alternative to crackers, you can also buy a baguette and slice, toast then drizzle with olive oil and a little bit of salt.

Ingredients:

 

  • 24-ounce packages soft goat cheese

  • 1/4 cup chopped fresh herbs (such as flat-leaf parsley, tarragon, or chives)

  • black pepper 

  • 14-ounce package plain crackers ( I prefer olive oil Triscuits)

 

Directions:

 

In a food processor, pulse the cheese, herbs, and 1/8 teaspoon pepper until creamy. Serve with the crackers.
