Bohemian BBQ 2016 - Praha, CZ

As Tal and I prepare for our trip to Prague and Israel, I also prepare myself for the mouthwatering  

Bohemian BBQ! I can already taste the smokey low & slow American barbecue in the light spring breeze of the banks of the Vltava river. After Bohemian BBQ had an extremely successful first year, they are back for a second year of professional BBQ teams competing in fire and smoke. Although they are still accepting teams for registration, the already signed up 22 teams are ready to go face to face. Cooking large cuts of meat over indirect heat for up to 20 hours to get tender, juicy, smoky goodness, the teams will glaze and season the meat with their own signature blends of spices and sauces.

 

The winning team has the chance to compete in the Jack Daniels World Championship in Tennessee and a Grand Prize. It's not going to be easy but it sure is going to be delicious. The teams are required to cook in 4 categories - Chicken, Pork Ribs, Pork Shoulder, and Beef Brisket ( UH YUM). Each team will receive a prize as a category winner, and to determine the overall winner, all categories will be added together.

 

 


There are a couple different BBQ techniques. The most commonly used and the one used in this competition is smoking. Smoking is when you cook using smoke at low temperatures—usually around 115–145 °C—and for a significantly longer cooking time (try up to 20 hours!).

 

 

 

Another technique is baking, in which you use a baking oven that uses convection to cook meats for an average time of about an hour. Braising uses the combination of direct and dry heat charbroiling on a ribbed surface with a broth-filled pot for moist heat. Grilling is what most of us do in our back yard. You cook your meat over hot fire for a few minutes. Grilling may be done over wood, charcoal, gas, or electricity.

 

I'm excited to drink a ice cold beer, devour some tender cuts, and meet the teams behind it all.
